Friday Fave Five

Time once again for Friday's Fave Five with blogging friends who join with Susanne over at Living to Tell the Story to remember the best parts of the past week.
  • Safe Commutes
It has been a snowy, icy, cold week here in Utah.  Monday was the worst day.  Several surrounding school districts cancelled school, but the one I work for did not.  We did however, have a two hour snow delay, which helped, but the roads were still treacherous.  There were near white-out conditions in some places and the roads were snow packed and icy. We saw several cars that had slid off the road.  Josh did not have to work Monday, and classes were cancelled at the college he attends so I was grateful he didn't have to try and drive his 1996 Corolla on very dangerous winter roads. It was snowy again Thursday morning and I was grateful that Charly, Josh and I got to our respective schools, and places of work, and then home again safely on some very snowy days.
  • Snow Day

Even with a two hour snow delay, very few students showed up to school Monday.  I had two students all day.  Just two.  All day. We normally have about 1600 students, but I would venture that less than a 100 actually showed up Monday.  There were lots of empty halls and empty classrooms.  I got a lot of lesson planning (and even a little personal reading) done.  I love working with my students, but a quiet work day with no students and no meetings was really nice.
  • Overnight Oats

I have a new favorite, healthy breakfast food - overnight oats.

It is made with these ingredients, then put in the refrigerator overnight.  It is ready to eat the next morning, no heating necessary.  It's actually really good and pretty healthy.

Josh gave me the idea when he ordered a box of Oats Over Night, after he saw an ad on Youtube.  He really liked it, but the version he ordered is pretty expensive.  I went online and found a recipe I can make myself, much more economically.

Here is the basic recipe as well as some flavor variations.  I have been adding freeze dried apple slices, a little cinnamon and maple syrup to mine.  It's a good and healthy breakfast that I look forward to each morning.
  • No Facebook/Instagram

I have been thinking about taking the facebook and instagram apps off of my phone for a while and the other night I did it.  Social media doesn't do me much good right now, with politics and family drama, so while I am am not completely gone, I am staying away from it as much as possible.  I'll stick with my blog and the kind and genuine people I meet in blogland.
  • Fast Internet
We are changing our internet provider this weekend and getting what we hope will be much faster internet.  Considering how slow, and often unreliable, our current internet is, I am looking forward to this.   Our internet options in our current city and neighborhood are somewhat limited, but I am hoping the new provider works out well.
  • Better Sleep
I have been sleeping a little better after following some good advice from a professional I consulted about my sleeplessness.  I still have a difficult time falling to sleep some nights, but overall, I am doing better. The main piece of advice is to limit screen time late at night.  Another piece of advice that seems to work is a very warm bath or shower within an hour before going to bed. A short power nap in the afternoon can help with getting to sleep later because an overtired mind and body often cannot get to sleep.  I have also been reading to relax instead of scrolling social media or reading blogs.  I don't get as many blogs visited each day, but I am sleeping better most nights.
